A chat with Alice Garretti, New York’s foodie name-to-know

We catch up with the catering maestro on her table must-haves and the secret to a good Martini

With more than a decade of experience, Alice – pronounced ‘Ah-lee-chay’ – Garretti is the go-to girl when it comes to hospitality. Currently, she’s in charge of catering throughout New York and the Hamptons for her family business, Acquolina, which has supplied mouthwatering menus for clients ranging from Dior to Google. At home, Alice relies on interesting details to bring her table to life: at the moment, Flora Danica plates and The Sette’s vegetable cutlery rests are on her wishlist. While she doesn’t consider herself a dab hand in the kitchen, Alice loves Swiss chef Daniel Humm’s inventive recipes, preferably served alongside Läderach chocolate – and a good Martini…

The most used appliance in my kitchen is…

My Thermomix. It’s literally six appliances in one – it mixes, steams, weighs, chops, cooks and gives you step by step instructions.

The one cookbook everyone should own…

I always get a tonne of inspiration from Daniel Humm’s Eleven Madison Park: The Cookbook. His food is fresh and always creatively presented, fine dining but not stuffy.

Olives for my martinis.

Favourite item from The Sette is…

It’s hard to choose just one, everything is so in line with my aesthetic! The Vegetable Cutlery Rests are super cute – I love to add details to my tablescapes that you only really notice once you sit down. It’s like layering surprises, to keep things interesting.

My most memorable meal…

My husband is in the restaurant business and each time he opens a new place it’s like birthing another child. I think that the first meal we have at any of the restaurants is always a memorable one, because it’s the culmination of so much hard work, time and dedication.

Al Garghet in Milan, they have the best Veal Milanese in the world.

My guilty pleasure is…

Läderach chocolate. They sell it by the slab and it’s beautifully displayed in decadent piles of multi-coloured deliciousness.

For dinner tonight…

Ossobuco, saffron risotto cake, frisée with hen of the wood mushroom and lemon Caprese torte. The perks of my job…!

Jet-sette… favourite holiday spot?

Besides Italy (which is a given), Careyes in Mexico has been the most amazing place that I’ve visited recently.

Sette the record straight… something people might not know about you?

I don’t really cook. I know a lot about food, wine and cooking techniques, my life revolves around food, but I leave the actual cooking to our chefs.

Sunrise or sunsette… favourite time of the day?

Sunset forever, I am a night owl.

Heart sette on… what’s on your wishlist?

Flora Danica plates from Royal Copenhagen. Maybe it’s the old lady in me, but I absolutely love them! I think I’m not the only one because they go for crazy amounts every time I try to buy them at auction.
